You don't need one. Get a bowl of ice water and continuously test the candy throughout cooking by dripping it into the ice water, then see how it forms. If you drip it in and it ends up breaking easily, then it is at the hard crack stage.

Or maybe the fact your mother probably dipped a licked spoon in the food while cooking for you plenty of times? It is unacceptable to do so when you serve food to other people and cook for others. .. you can definitely keep them in the refrigerator. This makes about 5 apples, so you'd have to make about 6 batches :)
