Chops were fun in a lot of ways. Some great players (e.g. Bobby Ryan) spent a season -- or most of one in Des Moines. Too bad AHL hockey didn't stick in central Iowa. As for the yellow ice ... epic indeed!

Looks really good, but its ver-mi-ch-elli" the c should sound like ch, like in chicken.. I can't wait to make this, I never though mustard and soy sauce as a "rub." I've never had slap yo mama, so should probably go easy on it??? +jeremy sillo yeah, you could go overnight. Might want to either add a little more water to the brine or pull back on some of the seasoning if you go overnight though.

145 is way way to fleshy for my liking. I found 185 to be the best texture for my liking as long as your smoking at a cooler temp it is not tough. I smoke my 2 inch chops at 220 for a good 2 hours at that time my chops are about 150degrees. I crank the grill up to 325 to bring them up to 185 about 30 min also get me a good char on the fat. But oh man they are oh so good. I am going to try your apple juice brine today though.

+HowToBBQRight Malcom Reed The experts now say 145 degrees for pork is good! The pork gets cooked, but not dry. So yours is the best way and these chops look good!!Nice video!

+Cristina Romero the brine is meant to be salty. I do rinse my chops before putting on my smoker though I don't think you have to do that. If you feal the chop is to salty after smoking it then decrease the salt by an 8th. You have to find the right balance for your liking. or reduce it by a 4th then increase it by an 8th until you get the flavor profile to your liking. Again taste of meat after cooking not what the brine tastes like before cooking. If your looking you aint cooking. I use a digital temp probe while cooking. This way I can see the pit temp and the meat temp with out having to open the smoker.I use a big green egg for smoking and grilling. I only used gas until i got the big green egg and have never looked back.

+Veronica Velasquez Whatever smoker you are using - it's all about holding the temps steady. You can use any recipe as long as you can hold those temps. Might want to start by smoking some chickens or a cheaper cut of meat to get the hang of your smoker...
